Homemade Peppermint OreosEvery Christmas, I tend to enter a 'baking' zone. I feel the need to make and bake a ton of cookies. I never really felt the need this year. Yes, I baked a few cookies but, overall, I just didn't seem to be in a baking mood. Despite this, I had to ramp it up due to a Cookie Exchange invite. I was told to bring four dozen cookies using a recipe from my kitchen. Anyone who knows me knows that I am a fraud...I use the Betty Crocker pouches and pre-made cookie dough from the stores. I had to do a little research...Internet blogs and the stack of magazines from my mom and sister, but I found two recipes that I feel are worthy for my kitchen in the future (even though they are not 'my' creations)! They took a lot of work, but in the end, I think they turned out wonderfully...and maybe even helped me get back into the Christmas baking mood!
